Welsh Rarebit

I’ve been told that you should never apologize for poor photos on your blog. This one is pretty bad even by my standards but I wanted to include this post because it’s another dish that I thought I’d never eat again when I became vegan. It’s another Urban Vegan dish. I didn’t set out to cook my through this book but I seem to be making a lot of dishes from it. It’s certainly my favourite new cookbook from an author I haven’t tested for.

Welsh Rarebit is a traditional English dish. I think it’s probably a supper time dish but in our house it used to be late breakfast, so that’s how I ate it. I rarely buy vegan cheese but I got some Cheezly mature cheddar for this recipe and I enjoyed it tremendously. The only thing that surprised me was the lack of Worcestershire sauce in the ingredient list. I have never eaten Rarebit without it, but I wanted to try the recipe as it was first before changing it. I added a splash of Worcestershire sauce (a vegan one of course) afterwards, and liked it far better, so in future I’ll add some directly into the mix. But that’s a small quibble – this is yet another simple and tasty veganisation from Urban Vegan. If you haven’t bought this book yet, what on earth are you waiting for?

  1. Shamefully, I don’t have Dynise’s book yet. I got sooo many review cookbooks before Christmas and even more cookbooks for Christmas that I’m totally overwhelmed with books now! But as soon as the new wears off the ones that I have, that’ll be my first purchase.

    Oh, and I apologize for photos on my blog all the time! That one looks just fine to me … fine enough to eat and I’ve never had Welsh Rarebit.

  2. i got that cookbook recently and have really enjoyed what i’ve made from it… but i didn’t know what rarebit was, so i haven’t made this yet. i’ll have to give it a try!
